Meal Prep with Evan & Maria: Almond Butter Brown Rice Crispy Treats

Almond butter. Chocolate. Crunch. Enough said.

This recipe is sooo simple and sooo tasty! These are the perfect dessert or snack to bring to a party, or, let’s be honest, just to have in your freezer at all times. All you have to do is mix everything together and stick the pan in the freezer. That’s it. -4 cups sprouted brown rice crisps

-1/2 cup almond butter, drippy

-1/2 cup brown rice syrup

-1 teaspoon vanilla extract

-1/2 cup mini chocolate chips

-pinch of salt



  1. spray a 9×9 inch cake pan with coconut oil cooking spray OR line with parchment paper. Set aside.
  2. Place almond butter, brown rice syrup, vanilla extract, and salt in a large bowl and mix until combined. Add in brown rice crisps and mix until the crisps are generously coated. Finally, add in mini chocolate chips and mix
  3. Transfer mixture into cake pan and use a spatula to press into pan, making sure everything is compacted.
  4. Place in freezer for at least 60 minutes. After 60 minutes, use a sharp knife to cut around the edge of the pan, popping it out as a whole. Slice into squares.
